Ingredients

- 1 cup boiled chickpeas (plus a few extra for topping)
- 2 tbsp ArgaNut Peanut Butter infused with Moroccan argan oil
- Juice of 1 lemon
- 3 tbsp chickpea water (or from the jar)
- 1 or 2 garlic cloves
- 1 tsp cumin

Salt & pepper, to taste

- Grilled red pepper
- Grilled courgette
- Boiled carrot slices
- Extra chickpeas
- Chili flakes

Blend

In a food processor or blender, combine boiled chickpeas, ArgaNut Peanut Butter, lemon juice, chickpea water, garlic, cumin, salt, and pepper. Blend until the mixture is smooth, silky, and luxuriously nutty. You may add 1 or 2 ice cubes for a smooth fluffier texture.

Transfer the hummus to a serving plate and smooth the top.

Arrange grilled red pepper, courgette, carrot slices, and extra chickpeas over the hummus. Sprinkle with chili flakes and drizzle a little olive oil.
