Ingredients:
- 6 large carrots, peeled and chopped
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 2 tablespoons olive oil
- 4 cups vegetable broth (or just boiled water)
- 1 cup coconut milk (optional for extra creaminess)
- Salt and pepper to taste
