Cracked, Fudgy, Peanut Butter Brookies

In this recipe, we invite you to experience brookies the ArgaNut way: elegant, decadent, and unforgettable.

Ingredients: (For 6 to 7 cookies)

50g flour

5g cocoa powder

1g baking soda

65g light brown sugar

55g whole eggs

35g unsalted butter

105g dark chocolate (minimum 70% cocoa)

A pinch of sea salt

Instructions:

1. Whisk the Base

In a bowl, whisk the eggs, sugar, and a pinch of salt until pale and slightly thickened, light enough to hold a gentle ribbon when the whisk is lifted.

2. Melt the Chocolate

Slowly melt the dark chocolate with the butter in a bain-marie or in the microwave. Let it cool slightly to 40°C, then pour into the egg mixture. Stir until smooth and glossy.

3. Fold in the Dry Ingredients:

Sift together the flour, cocoa powder, and baking soda. Fold them into the wet batter with care. You’re looking for a rich, dark, and luscious texture.

4. Cool the Batter:

Let the batter cool down to approx 20-25°C. This ensures a soft centre with beautifully cracked edges.

5. Scoop & Shape:

Spoon rustic rounds (approx 5cm) onto a lined baking tray, no need for perfection. Each one should look like it belongs in an artisanal bakery.

6. Bake to Perfection:

Bake at 180°C (fan 160°C) for 10–12 minutes. You want a set edge and a gooey middle. Trust the timing. Do not overbake.

7. The Signature Swirl:

While still warm, swirl ArgaNut Peanut Butter with Argan Oil and Date Syrup across each brookie. The heat will gently melt the peanut butter into silky ribbons of flavour.

Tips & Pairings: Elevate Every Bite

Pair it with a shot of rich espresso.

For the ultimate finish, sprinkle flaky sea salt or crushed roasted peanuts over the peanut butter swirl.

Plating suggestion: serve warm on a stoneware plate with a spoonful vanilla bean gelato.
